Cajun Creamed Shrimp

In my travels and experience Cajuns are certainly one of the most hospital cultures in the world. I've spent
many a night partying out on the coast of lake Pontchartrain at a little Cajun community of about two hundred families. The environment is surreal. The community is way off the beaten path down a dirt road right on the bank of the lake. The houses are built on stilts out over bank of the lake. At night the fire flies come out and those people prepare a feast like you wouldn't believe. Collard greens, corn bread, boiled crab, crawfish, a dozen different gumbos you name it. each family prepares something and you can just go back there and eat. Of course it helps to know somebody because you'll never find the place on your own. That's real Cajun.

Cajun Creamy Shrimp

 Ingredients


  • 3 small cans shrimp
  • 1 lb. raw shrimp, peeled and deveined
  • 1/2 cup water
  • 2 - 8 oz. pkg. cream cheese
  • 1 cup mayonnaise
  • 1/4 lb.butter
  • 1 medium onion, chopped
  • 1/2 lemon
  • Salt and pepper to taste
Directions

Boil raw shrimp in 1/2 cup water, onion, lemon and seasonings for 5 minutes. Drain. Add to all ingredients and mix well. If too thick add some shrimp water. Must not be too thin. Serve with crackers. More pepper may be added if a really hot taste is desired. In Cajun country they use this as a dip but I personally love it over rice or pasta.
