Creole Shrimp And Sweet Potato Grits

Shrimp & Sweet Potato Grits

makes 6 servings

total time 45 min

Ingredients

2    cups milk 2%
1    cup uncooked regular grits
1    tbsp Creole seasoning
2    lb large raw shrimp peeled and deveined
2    garlic cloves, minced
1    tbsp canola oil
3/4 cup chopped green onions
1/4 cup chopped fresh cilantro
1    tbsp lemon zest
2    tsp asian sriracha hot chilli sauce
1    cooked mashed sweet potatoes
1    cup shredded smoked gouda cheese
2    tbsp butter
1    tsp table salt
1/2 tsp freshly ground black pepper
      garnish: fresh cilantro sprigs

Directions

bring milk and 1 1/2 cups of water to a boil in a large sauce pan over medium high heat. Gradually whisk in grits. Reduce heat to medium low and simmer stiring occasionally 10 min or until thickened.

Meanwhile sprinkle Creole seasoning over shrimp. Saute garlic in a hot oil in a large skillet over medium high heat for 30 seconds. Add shrimp and saute 3 min or until shrimp are almost pink. Add green onions and next 3 ingredients  and saute 3 minutes.

Stir potatoes and nest 4 ingredients into grits. Serve shrimp mixture over sweet potato grits.
